This simple and nutritious side dish is full of cheap and healthy ingredients and is big on flavor. The lemon pepper seasoning pairs nicely with the bitterness of the kale and the earthy flavor of the mushrooms and the red onion adds a little sweetness to round out this side dish. While we’re still working on on-boarding the kids when it comes to greens in anything other than a smoothie, this is a favorite of my husband and I for sure!
