Lemon Pepper Kale

This simple and nutritious side dish is full of cheap and healthy ingredients and is big on flavor. The lemon pepper seasoning pairs nicely with the bitterness of the kale and the earthy flavor of the mushrooms and the red onion adds a little sweetness to round out this side dish. While we’re still working on on-boarding the kids when it comes to greens in anything other than a smoothie, this is a favorite of my husband and I for sure!

Equipment

  • cast iron or non-stick skillet

Ingredients
  

  • 2 tbsp butter or olive oil
  • 1 small red onion diced
  • 4 oz mushrooms sliced
  • 3 cups kale washed, ribs removed and chopped
  • 1 tbsp lemon pepper seasoning

Instructions
 

  • Melt butter in cast iron pan over medium low heat
  • Add diced onion and sliced mushrooms and saute until onion is soft and translucent
  • Add lemon pepper seasoning and stir
  • Add chopped kale and saute for about 20 minutes, stirring frequently until kale is tender
  • Adjust for seasoning and serve warm
